The journey of fresh tofu begins with the careful selection of premium-quality soybeans. We source high-grade beans known for their protein content and natural flavor. These soybeans are thoroughly washed and soaked in clean drinking water for several hours. This soaking softens the beans and prepares them for grinding while preserving their nutrients.
Once soaked, the soybeans are ground into a smooth mixture and filtered to extract fresh soy milk. This milk is the heart of tofu production. It is gently heated under controlled temperatures to maintain nutritional value while ensuring food safety. As the soy milk warms, natural coagulants are added. These help the proteins in the milk separate into soft curds and liquid whey.
The curds are then collected and transferred into molds lined with clean cloth. Here, gentle pressure is applied to remove excess water and shape the tofu into blocks. The pressing time determines whether the tofu becomes soft, medium, or firm — allowing different textures for various cooking styles.
After shaping, the tofu blocks are cooled in fresh, clean water to set their structure and lock in freshness. This cooling step also improves texture and shelf life naturally without the need for preservatives.
